The Corman Harriman Outdoor Center is an ideal destination for anyone looking for hiking, paddling, and camping opportunities in the heart of Harriman State Park at Breakneck Pond. Harriman State Park, New York's second largest park, is located 30 miles from Manhattan and accessible by public transportation. 
 

The Harriman Outdoor Center Head Cook(s) assists in food preparation and kitchen management in cooperation with our Lodge Crew. This includes but is not limited to menu & meal preparation, food acquisition, safety, and storage.  This position requires excellent time management to balance cooking for guests in addition to culinary responsibilities. 

This is a full-time, seasonal position is based out of the Appalachian Mountain Club’s (AMC) Harriman Outdoor Center (CHOC) in Haverstraw, NY. 

What you’ll be doing at AMC 

  • Assist in creating wholesome, healthy, and high-quality meals from scratch and implement established rotating menus for the season, holidays, and specialty dinners. 
  • Clean, sanitize, operate, and inspect all areas maintained by the kitchen staff to exceed compliance with required permits, on-site licenses and health and safety standards.  
  • Responsible for the order, purchase, delivery and inventory of all food and kitchenware to maximize organization, minimize waste and comply with operational budgets.  
  • Responsible for training Lodge Crew in meal preparation and cleaning duties associated with breakfast, lunch, and dinner.  
  • Supervise kitchen staff during shifts and meetings to ensure high standards of service and productivity  
  • Attend off-site meetings as needed.  
  • Welcome and assist outdoor program center visitors and guests in a positive manner; respond to any problems or special requests with a professional demeanor.

What AMC is looking for 

  • Must be 18 years of age 
  • 3-4 yrs. cooking, catering or supervisory experience in commercial food service operations in preparing diverse meals including foods that incorporate fresh and/or local ingredients in an institutional setting is preferred. 
  • 12 months prior experience in culinary arts, kitchen operations, or food service is required. 
  • Experience with menu development, pricing, and food acquisition 
  • Ability to work a varied schedule including early morning, evenings, weekends, and holidays 
  • Must be able to successfully complete the ServSafe food handling course. 
  • Must have an acceptable driving record to operate AMC vehicles. 
  • Exceptional customer service skills and the ability to be a team player within a detail-oriented, fast-paced environment. 
  • Ability to perform work in a camp setting in all weather conditions 
  • Ability to use a computer to send and receive email, submit orders to vendors and create Microsoft Word and Excel documents 

Physical abilities: Ability to stand, sit, walk, and lift up to 60 pounds from waist to head high or from floor to waist high is required. The job is performed in a standard commercial kitchen with only occasional exposure to hazardous cleaning products.

Salary range: $21.00/ Hourly

The initial salary represents our starting point, and our compensation philosophy is designed to reward and recognize the contributions of our employees as they grow within the organization. External candidates typically begin their journey with us at the starting point of the salary range. The final compensation offer will be based on factors such as experience, education, skills and geographic differential relevant to the position, and will be discussed during the interview process.
