JOB SUMMARY

This position contributes to Bronze Buffalo’s success by assisting the Executive Chef in the supervision of all culinary operations. Ensuring the highest quality standards are met for food, service, and cleanliness. Additionally, assisting in supervision of culinary personnel. Lastly, focus on living the Bronze Buffalo mission and vision, which are critical to the success of this position as a Bronze Buffalo community member. The ideal candidate will be friendly, professional, and demonstrate exemplary leadership skills to ensure their daily operations align with BBR’s core values.                                        

JOB FUNCTIONS

·        Responsible for organization and cleanliness of all food preparation areas as to maintaining established par stocks, prep levels, efficient production, appearance and health code standards.

·        Completely responsible for all culinary kitchen’s operations in Chef's absence.

·        Maintains communication with Executive Chef and Catering and Events Management concerning upcoming events and special projects.

·        Develops positive working relations with all other departments (stewarding, maintenance, rooms division, accounting, purchasing, and Est. al.).

·        Maintain consistency of product with great attention to food quality, taste and presentation. Aids in the concept, creativity, revision and implementation of all menus. Maintains current recipes and prep sheets.

·        Assists in the execution, planning, ordering, preparation & completion of all Catering & Conference Service events as clearly stated on all Banquet Event Orders.

·        Works with Executive Chef in regard to developing and maintaining specifications, ordering and requisitioning all food supplies and equipment. Sees that all food products are properly received, handled and stored. Is knowledgeable about County Health Dept. Codes in this regard.

·        Assist Chef in administrative functions pertaining to payroll, scheduling and the control of food and labor costs.

·        Maintain high employee morale and a good reliable staff; to recruit motivate and train cooks and utility persons. To organize an efficient flow of production and maintain minimum, but adequate staffing.

·        Ensure that high standards of dress and personal hygiene are maintained by all employees. Sets the example as related to speed, professionalism, cleanliness and accuracy.

·        Ensure proper maintenance and care is exhibited by all employees toward equipment furnished by the hotel.

·        Attends and participates in Mid-Manager and departmental meetings.

·        Always projects a positive attitude; to embrace and enforce the hotel’s guidelines and procedures. Able to make quick, intelligent decisions.

·        Responsible for any other duties as assigned by Executive Chef.

 

JOB REQUIREMENTS

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that they can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities:

·        Must have prior experience in a kitchen management position.

·        Must be in good physical condition, able to lift 75 lbs, and carry 50 lbs. Will be required to stand for long periods of time in one area near hot equipment (ovens, burners, etc.).

·        Must be able to work on slippery surfaces and under intense pressure.

·        Must have exemplary leadership skills, proficient in training and succession planning.

·        Must have good communication skills: able to manage and motivate people.

·        Must be responsible, insightful, organized, and self-motivated.

·        Must adhere to practices of occupational safety and health.

·        Ability to identify, address and resolve conflict.
