    • Basic cooking skills & techniques in all existing kitchen stations: Salads, Desserts, Broiler/Grill, Sauce/Sauté, Fryer and Vegetables
    • Full knowledge of Culinary school Cook Book
    • Basic overview of all kitchen stations
    • Advanced overview of a single station
    • Advanced verbal and written communication skills such as describing daily specials, writing prep list
    • Good knowledge of Meat and Fish cooking temperature and stages of doneness
    • Basic knowledge of large volume food preparation
    • Basic knowledge of Cakes & Individual Pastries
    • Basic knowledge of Garde Manger plate & platter presentation, Fruits and Vegetables carvings
    • Must know how to clean, fillet, marinate and properly store most Fishes
    • Must know how to clean, bone, tie, portion, marinate and store most prime cut meat & poultry
    • Good food portioning skills
    • Basic knowledge of American regional cooking
    • Some knowledge of international cooking techniques and basic recipes
    • Basic recipe knowledge in Meats, Fish, Vegetables, Fruits, Stocks & Sauce preparations
    • Basic food purchasing & receiving knowledge. Must know how to read an invoice & to write a requisition
    • Basic knowledge of accounting procedures such as inventories, recipe and menu costing
    • Be able to understand Point of Sale system & apply the technique
    • Some leadership knowledge

    Education and/or Experience: Three years (Hands-on) experience as an Apprentice or Cook 3 in a la carte Continental Restaurant

    Language

    Must be able to comprehend, read, write and speak the English language in order to communicate with co-workers and fully understand job assignments.

     Mathematical Skills:

    Basic knowledge in solids and liquids measurement units

    Must be able to convert units of measures

    Must be able to add, subtract, multiply and divide

    Basic Food costing knowledge

    Culinary

    Line Cooks

    We are recruiting Line Cooks with a minimum of 2 years experience.

    Commissary/ Warehouse

    Commissary/Warehouse Clerk

    $12.00 / hour
    Key Largo

    Under general supervision, store and issue all food and beverage products. 

    Essential Duties and Responsibilities: 

    • Rotate stock to maintain first in first out.
    • Remove out of date items with acknowledgement of Commissary Manager.
    • Issue out products using appropriate documentation to insure proper outlet charging.
    • Must be able to operate pallet jacks, dollies and hand trucks.
    • Maintain storeroom cleanliness to meet health code standards.
    • Must be able to work in a fast paced environment.                                      

    Qualifications: 

    • Must have general knowledge of food to efficiently fill storeroom orders.
    • Must be able to read and understand requisitions.
    • Requires strong organizational skills.
    • Must be able to work independently and in a timely manner.       

    Education and/or Experience: 

    Any combination of education, training or experience that provides the required knowledge, skills and abilities.  Computer knowledge required.  Prior receiving and delivery experience preferred but not required.

    Food & Beverage

    Server

    $5.54 / hour + tips
    Key Largo

    Service of food and/or beverage to include the order taking and delivery of any food and/or beverage items. This task is to be handles in a friendly, courteous, helpful, timely and professional manner resulting in a very high level of guest satisfaction.

    Essential Duties and Responsibilities:

    • Check station before, during and after shift for proper set-up and cleanliness.
    • Greet the guest in a friendly and courteous manner and explain any specials and/or restaurant promotions for guest awareness.
    • Record the details of the order from the guest, repeating the order to the guest to check for accuracy.
    • Input the order into the point of sale computer to inform the kitchen of the particulars in the order being placed.
    • When complete, retrieve order up to 30lbs. from the kitchen, confirm its accuracy, lift and deliver to guest along with appropriate condiments. Abide by State, Federal, and Corporate liquor regulations pertaining to serving alcoholic beverages to minors and intoxicated guests.
    • Replenish beverages as necessary and check with guests for overall satisfaction.
    • Market and serve upon request any dessert items or specialty coffees.
    • Present the check to guest promptly.
    • Regular Attendance in conformation with standards, which may be established by Ocean Reef Club from time to time, is essential to the successful performance of this position. Associates with irregular attendance will be subject to disciplinary action, up to and including termination of employment.

    Support Functions:

    • Assist the bus help in clearing and resetting the tables.
    • Perform all assigned side work to include replenishing condiments and restocking side stands.
    • Perform any general cleaning tasks using standard hotel cleaning products as assigned to adhere to health standards.

    Any combination of education, training or experience that provides the required knowledge, skills and abilities. Grade school education preferred. One to three years of hospitality experience preferred.

    Certificates, Licenses, Registrations:

    Must be able to obtain any required certificates. i.e....Food Service Certification or, Liquor Service Card.

    To serve beverages to the members/guests in a friendly, courteous and timely manner.

    Essential Duties and Responsibilities

    • Maintain proper and adequate set-up of the bar on a daily basis. This includes requisitioning and stocking of all beer, wine, spirits, paper products, fruit and other necessary supplies based on a daily business projections. Working in a clean – as – you – go manner.
    • Greets member/guests in a courteous and friendly manner, promote drink and food specials, and ensure quality of drink recipes.
    • Accurate check processing in point of sale system.
    • Accountability for appropriate portions on all drinks served.
    • Attend monthly meetings.
    • Always represent the quality of The Ocean Reef Club in appearance, style, and attitude.

    Qualifications:

    • Previous bartending experience is required.
    • Previous experience with micros or any other POS system.

    Education and/or Experience

    High School diploma required. College degree preferred.

    Language Skills

    Must be able to comprehend the English language in order to communicate with co-workers and fully understand job assignments.

    Reasoning Ability:

    The ability to carry out tasks and instructions whether written or verbal; being able to recognize signs of intoxication and cut-off if necessary.

    Certificates, Licenses, Registrations:

    All appropriate food and federal and state licenses required for food and beverage managers. TIPS certification helpful.
