    • We are seeking a Kitchen Expo to join our dynamic kitchen team. This role is crucial for coordinating the flow of dishes from the kitchen to the dining area, ensuring that food is delivered promptly and accurately according to guest orders. The Kitchen Expo will act as a critical link between the kitchen staff and the front of house, facilitating communication and maintaining the pace of service.
    • This is a seasonal position running mid-April through mid-October, based on the busyness of the cruise ship season

    Responsibilities

    • Understand entire menu and Manage the order flow from the kitchen to ensure dishes are prepared in sequence and sent out to diners in a timely manner
    • Check the presentation and quality of each dish before it is served to guarantee it meets our standards
    • Act as a communication hub between the kitchen and the dining room staff to relay messages about order status, dietary restrictions, and guest preferences, in addition to priorities and needs to kitchen line
    • Coordinate the pairing of dishes and prioritize food orders to streamline kitchen operations and improve service efficiency
    • Resolve any issues related to dish preparation or timing by coordinating with chefs and servers
    • Prep and maintain station, keeping fully stocked and clean

    Qualifications

    • 3+ years experience in a kitchen or food service roll (in a high-volume, fast-paced setting preferred) with a strong understanding of kitchen operations and kitchen display screen (KDS) systems
    • Ability to work in a fast-paced environment, managing stress and maintaining composure under pressure
    • Keen attention to detail to ensure the accuracy and quality of prepared dishes
    • Excellent organizational and communication skills to manage multiple tasks, support and interact effectively with kitchen and dining staff teams
    • Knowledge of cooking procedures, kitchen equipment and safety rules for kitchen and equipment
    • Flexible and adaptable to quickly changing demands

    Head Indoor Grower

    $24.00 - $27.00 / hour

    Located in the seasonal Alaskan cruise ship port of Skagway, the Skagway Brewing Company is an expansive three-story building featuring an on-site microbrewery, retail store, restaurant, pub, and beer garden, with seating for up to 375. We take pride in our sustainability efforts, including a year-round indoor aeroponic farm where we grow all of our own leafy greens and culinary herbs. In 2024 we harvested approximately 250 lbs. of greens weekly for our two locations, and our yield is boosted by the carbon dioxide released from the brewing process, which we capture and send via pipes over to the garden.     Job Summary
    The Skagway Brewing Company is seeking an experienced, passionate, and independent Head Indoor Grower to oversee all indoor aeroponics farm operations. This seasonal position runs from March through September, averaging 40 hours per week. The Head Grower will report to the Operations Manager and will be responsible for cultivating, harvesting, and managing an indoor aeroponic farm, producing the highest quality herbs and greens while maintaining exceptional communication between departments. 

    Responsibilities 

    • Cultivate, care for, and harvest culinary herbs and leafy greens using our aeroponic gardening system.
    • Manage garden nutrients and maintain the garden system software.
    • Perform basic maintenance tasks such as cleaning grow trays and mixing nutrient solutions.
    • Collaborate with the maintenance department to ensure equipment, tools, and supplies are properly maintained.
    • Utilize and troubleshoot automated farming technologies to ensure smooth operations
    • Develop and maintain daily and weekly checklists, schedules, and inventories for garden management.
    • Select and order necessary equipment and supplies to support the grow room.
    • Maintain detailed records of crop activities, harvests, and observations.
    • Collaborate with the Executive Chef to forecast weekly harvest quantities.
    • Establish relationships with local grocers to sell excess product when applicable.
    • Hire, train, and supervise farm staff; create schedules and ensure adherence to company policies.
    • Ensure farming practices align with Skagway Brewing Company's sustainability initiatives.
    • Maintain and update Standard Operating Procedures (SOPs) as needed to ensure optimal efficiency and compliance with safety standards.
    • Provide coaching, performance feedback, and guidance to employees.
    • Maintain labor costs to ensure profitable harvests.
    • Ensure the farm is aesthetically pleasing, clean, and safe.
    • Regularly communicate with all departments for efficient information relay.

    Qualifications
    Strong passion for horticulture and aeroponics.

    • Knowledge and experience in the science of farming, including plant biology, nutrient management, and sustainable growing practices.
    • Excellent communication and leadership skills.
    • Independent work ethic and ability to thrive in a dynamic environment.
    • Experience in farm management or related roles is preferred.
    • Ability to work on your feet for long hours and lift heavy equipment.
    • Attention to detail and organizational skills.

    • The Line Cook is an important team player, responsible for preparing and plating all menu items in an efficient manner while maintaining quality, cleanliness standards and effective communication. 
    • May assist in supportive tasks such as food and portion prep. 
    • This is a seasonal position running late April/early May through late September.

    Responsibilities

    • Prep and maintain a stocked station
    • Prepare each dish on our menu using our proven recipes
    • Memorize and employ our serving portion sizes and all basic meal prep procedures 
    • Maintain and follow proper food handling, safety and sanitation procedures – all phases of food production and service including storage, rotation, preparation, recipe adherence, cooking methods, plate presentation, quality, service and production time adherence
    • Evaluate finished products for appearance, taste, smell and texture according to internal specifications
    • Work with team of cooks to do portion prep work for other shifts when needed
    • Performs shift opening and closing duties as assigned, including cleaning cutting boards, fryers, grills, equipment and floors

    • This is a seasonal position running early May - late September.

    Responsibilities 

    • Properly stack, sort and wash all soiled wares by using dishwashing machine or by hand if needed
    • Accurately organize and store all washed items in correct assigned locations
    • Clean, sanitize, and maintain dishwashing machine; refill cleaning agents as needed
    • Manage cleanliness and organization of dish pit, freight and food storage areas, including removal of trash, compost, cardboard, recycling, reporting any kitchen equipment or maintenance issues to the manager on duty on immediately
    • Perform opening/closing procedures as assigned
    • Maintain and follow proper food handling, safety, and sanitation procedures
